Ingredients

3 large eggs

1/4 cup fresh mozzarella cheese, shredded

2 tablespoons fresh basil, chopped

1/4 cup cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper, to taste

Optional: Red pepper flakes for a kick

Instructions

Prepare the Ingredients: Crack the eggs into a bowl, and whisk them together with a pinch of salt and pepper until fully blended. Set aside.

Heat the Pan: In a medium skillet, heat the olive oil over medium heat until shimmering but not smoking.

Cook the Eggs: Pour the whisked eggs into the skillet, swirling the pan gently to ensure an even distribution. Cook for about 2-3 minutes, or until the edges start to set.

Add the Fillings: Sprinkle the shredded mozzarella, cherry tomatoes, and chopped basil evenly over one half of the omelet. If using, add a pinch of red pepper flakes for extra flavor.

Fold the Omelet: Once the cheese has begun to melt and the bottom of the omelet is firm, carefully fold the omelet in half over the fillings. Cook for an additional minute to allow the cheese to melt completely.

Serve Up: Gently slide the omelet onto a plate. Garnish with additional basil if desired, and serve hot.
