Mediterranean Steak Bowls

Simply cook the quinoa, sauté the steak, mix up a colorful salad, and assemble it all together. Top it with creamy feta and tzatziki for an extra burst of flavor. Ingredients
  

1 lb steak (sirloin, flank, or ribeye)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup quinoa (rinsed)

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup red bell pepper, diced

½ red onion, finely chopped

1 cup chickpeas (canned, rinsed, and drained)

¼ cup fresh parsley, chopped

Juice of 1 lemon

½ teaspoon dried oregano

½ teaspoon cumin

¼ cup feta cheese, crumbled (optional)

¼ cup tzatziki sauce (store-bought or homemade)

Instructions
 

Prepare the Quinoa: In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until all the liquid is absorbed. Fluff with a fork and set aside.

    Cook the Steak: While the quinoa is cooking, season both sides of the steak with salt and pepper. Heat a tablespoon of olive oil in a skillet over medium-high heat. Add the steak and sear for about 3-4 minutes on each side for medium-rare, or until your desired doneness. Remove from heat and let it rest for 5-10 minutes before slicing into thin strips.

      Prepare the Vegetables: In a mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, chickpeas, parsley, lemon juice, oregano, cumin, and a drizzle of olive oil. Toss well to combine.

        Assemble the Bowls: In serving bowls, start by adding a base of quinoa, then top with the sautéed vegetables and chickpea salad.

          Add the Steak: Lay the sliced steak on top of the veggies, sprinkle with crumbled feta cheese (if using), and drizzle with tzatziki sauce.
