Ingredients
  

2 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, thinly sliced

1 cup chickpeas, drained and rinsed

1/2 cup kalamata olives, pitted and halved

1/2 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.

    Add the chickpeas and kalamata olives to the bowl, mixing them gently with the fresh veggies.

      Sprinkle the crumbled feta cheese and chopped parsley on top of the salad.

        In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to create a dressing.

          Drizzle the dressing over the salad and gently toss to combine all the ingredients.
