Mediterranean Lemon Chicken Soup

Ingredients
  

1 lb boneless, skinless chicken thighs

4 cups chicken broth (low sodium)

1 medium onion, diced

2 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

1 cup orzo pasta (or any small pasta)

Juice and zest of 2 large lemons

2 cups fresh baby spinach

1 tsp dried oregano

1 tsp thyme (fresh or dried)

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Feta cheese, crumbled (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, sautéing until softened (about 5 minutes).

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the chicken thighs to the pot and pour in the chicken broth. Bring to a simmer, then cover and cook for about 20-25 minutes, or until the chicken is fully cooked.

        Remove the chicken thighs from the pot and let them cool slightly before shredding into bite-sized pieces.

          Once shredded, return the chicken to the pot, and stir in the orzo pasta. Cook for an additional 8-10 minutes, or until the pasta is tender.

            Add the lemon juice, lemon zest, oregano, thyme, and season with salt and pepper to taste. Stir in the fresh spinach, allowing it to wilt.

              Remove from heat, ladle the soup into bowls, and garnish with chopped parsley and crumbled feta cheese, if using.

                Serve warm and enjoy the bright flavors of the Mediterranean!
