Mediterranean Chicken Pasta Salad

Ingredients
  

2 cups cooked rotini pasta

1 cup cooked, shredded chicken breast

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/2 cup kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions
 

In a large mixing bowl, combine the cooked rotini pasta, shredded chicken, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese. Mix gently to combine all the ingredients evenly.

    In a separate small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper until well emulsified.

      Pour the dressing over the pasta salad and toss until everything is thoroughly coated with the dressing.
