1 lb ground turkey or beef

1 medium yellow onion, diced

2 cloves garlic, minced

2 bell peppers (red and yellow), diced

1 cup cooked rice (white, brown, or quinoa)

1 can (14.5 oz) diced tomatoes, with juices

1 can (8 oz) tomato sauce

1 tsp Italian seasoning

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded cheese (mozzarella or cheddar)

Fresh parsley or cilantro, chopped (for garnish)

Instructions
 

Brown the Meat: In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it up with a spoon, about 6-8 minutes. Drain any excess fat if necessary.
