Ingredients

1.5 lbs flank steak

3 tablespoons olive oil

2 tablespoons adobo sauce (from canned chipotles in adobo)

2 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 lime, juiced

Fresh cilantro, for garnish

Optional: sliced jalapeños, for serving

Instructions

Prepare the Marinade: In a bowl, whisk together the olive oil, adobo sauce, minced garlic, ground cumin, smoked paprika, dried oregano, salt, black pepper, and lime juice until well combined.

Marinate the Steak: Place the flank steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for the best flavor.

Preheat the Grill or Skillet: Heat your grill to medium-high temperature or preheat a cast-iron skillet over medium-high heat.

Cook the Steak: Remove the steak from the marinade and allow any excess marinade to drip off. If grilling, place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness. If using a skillet, sear the steak for about the same time, flipping halfway through.

Rest the Steak: Once cooked, transfer the steak to a cutting board. Let it rest for 5-10 minutes to allow the juices to redistribute.

Slice and Serve: Slice the steak against the grain into thin strips. Garnish with chopped fresh cilantro and optional sliced jalapeños if desired. Serve alongside warm tortillas, rice, or your favorite sides for a complete meal.
