2 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1 large egg

2 tablespoons Dijon mustard

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper or greasing it lightly.

    In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper. Mix well until combined.

      In another bowl, whisk together the egg and Dijon mustard until smooth.

        Take each chicken breast and dip it into the egg mixture, making sure it's well coated. Allow any excess to drip off.

          Next, transfer the chicken to the Parmesan breadcrumb mixture, pressing gently to ensure an even coating on all sides.

            Place the crusted chicken breasts on the prepared baking sheet and drizzle a little olive oil over the top to help with browning.

              Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden and crispy. An internal temperature of 165°F (74°C) is recommended.

                Once done, remove from the oven and let the chicken rest for a few minutes before slicing.
