Lemon Garlic Shrimp Pasta With Spinach

8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

3 cups fresh spinach leaves

4 cloves garlic, minced

1 lemon (zested and juiced)

1/4 cup olive oil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (plus more for serving)

Fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté until fragrant, about 1 minute. Add the shrimp to the skillet, season with salt and pepper, and cook until they turn pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.

      Combine Ingredients: In the same skillet, add the fresh spinach and lemon juice. Cook until the spinach wilts, about 2-3 minutes. Return the shrimp to the skillet, along with the cooked pasta, lemon zest, and half of the reserved pasta water. Toss everything together over medium heat, adding more pasta water if needed to create a light sauce.

        Finish and Serve: Remove from heat, stir in grated Parmesan cheese, and adjust seasoning with salt and pepper. Serve immediately, garnished with chopped parsley and additional Parmesan cheese.
