2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 large lemon

1/2 cup freshly squeezed lemon juice (about 2 lemons)

1 cup fresh blueberries (you can use frozen if fresh is unavailable)

1/4 cup powdered sugar (for glaze, optional)

1 tablespoon lemon juice (for glaze, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or non-stick spray.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, lemon zest, and lemon juice until well combined.

          Gradually add the dry ingredients to the wet ingredients, mixing just until the flour is incorporated. Don’t overmix; it’s okay if a few flour streaks remain.

            Gently fold in the blueberries, being careful not to crush them.

              Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                  Once baked, remove the bread from the oven and allow it to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

                    (Optional) For the glaze, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled bread once it's completely cool.
