8 oz whole wheat pasta (your choice, fusilli or penne works great)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1/4 cup Kalamata olives, pitted and halved

1/4 cup fresh basil leaves, chopped

1/4 cup sunflower seeds (or your choice of nuts)

Zest of 1 lemon

Juice of 2 lemons

3 tbsp olive oil

1 garlic clove, minced

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, typically around 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the lemon zest, lemon juice, olive oil, minced garlic, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, and chopped basil.

        Mix in the Dressing: Pour the dressing over the pasta salad and toss until all ingredients are well coated.
