Ingredients

1 lb ground beef (preferably 80/20 for flavor)

4 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon gochugaru (Korean red pepper flakes) or more for spice

1/2 medium onion, diced

1 cup broccoli florets

1 cup shredded carrots

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice (for serving)

Instructions

Prepare the sauce: In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, and gochugaru. Set aside.

Cook the beef: In a large skillet over medium-high heat, add the ground beef. Cook for about 3-4 minutes until browned, breaking it apart with a wooden spoon.

Add aromatics: Once the beef is cooked, add the minced garlic, ginger, and diced onion to the skillet. Sauté for about 2-3 minutes until the onion becomes translucent and aromatic.

Incorporate vegetables: Add the broccoli florets and shredded carrots to the skillet. Stir well and cook for another 3-4 minutes until the vegetables are tender.

Mix in the sauce: Pour the prepared sauce over the beef and vegetable mixture. Reduce the heat to medium and cook for another 2-3 minutes, ensuring everything is well coated and heated through.

Assemble bowls: Serve the beef and vegetable mixture over cooked rice. Garnish with chopped green onions and a sprinkle of sesame seeds.
