Ingredients

1 lb ground beef

1 tablespoon vegetable oil

1 small onion, diced

2 cloves garlic, minced

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon Gochujang (Korean chili paste)

1 tablespoon sesame oil

1 teaspoon ginger, grated

1/2 cup carrots, shredded

1/4 cup green onions, chopped

4 burger buns (preferably brioche)

Sesame seeds for garnish

Optional: cucumber pickles for topping

Instructions

Prepare the Beef Mixture: In a large skillet, heat the vegetable oil over medium-high heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 2-3 minutes.

Brown the Meat: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat.

Flavor It Up: Stir in the soy sauce, brown sugar, Gochujang, sesame oil, and grated ginger. Mix well to ensure the meat is evenly coated with the sauce. Let it simmer for about 5 minutes, allowing the flavors to meld together.

Add Veggies: Stir in the shredded carrots and half of the chopped green onions. Cook for an additional 2-3 minutes until the carrots soften slightly.

Assemble the Sloppy Joes: Toast the burger buns lightly if desired. Spoon the Korean beef mixture generously onto the bottom half of each bun.

Garnish and Serve: Sprinkle with sesame seeds and the remaining green onions. If using, add a few cucumber pickles for an extra crunch. Top with the other half of the bun.
