Ingredients

For the Meatballs:

1 pound ground beef (or ground pork for a different flavor)

1/4 cup breadcrumbs

1/4 cup green onions, finely chopped

1/4 cup fresh cilantro, chopped

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon ground ginger

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (adjust according to spice preference)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang (Korean chili paste)

1 teaspoon sesame oil

1 teaspoon rice vinegar

1 teaspoon honey

1 clove garlic, minced (optional for extra flavor)

Salt to taste

Instructions

Prepare the Meatball Mixture: In a large bowl, combine the ground meat, breadcrumbs, green onions, cilantro, garlic, soy sauce, sesame oil, brown sugar, ground ginger, black pepper, and red pepper flakes. Mix everything until well combined but avoid over-mixing to keep the meatballs tender.

Form the Meatballs: With wet hands, scoop a small portion of the mixture (about 1.5 inches in diameter) and roll it into a ball. Repeat until all the mixture is used up. You should have around 20 meatballs.

Cook the Meatballs: Preheat your oven to 400°F (200°C). Place the meatballs on a lined baking sheet and bake for about 15-20 minutes, or until they are browned and cooked through. Alternatively, you can pan-fry the meatballs in a large skillet over medium-high heat for about 6-8 minutes on each side.

Make the Spicy Mayo Dip: While the meatballs are cooking, whisk together the mayonnaise, gochujang, sesame oil, rice vinegar, honey, and minced garlic in a small bowl until smooth. Taste and adjust seasoning with salt if necessary.

Serve: Once the meatballs are cooked, place them on a serving platter. Serve hot with the spicy mayo dip on the side for drizzling or dipping.
