Italian Stuffed Cabbage Rolls

1 large head of green cabbage

1 pound of ground beef (or ground turkey)

1 cup cooked arborio rice (or jasmine rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional)

2 cups tomato sauce (for baking)

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Cabbage: Bring a large pot of salted water to a boil. Carefully remove the outer leaves from the cabbage head and blanch them in the boiling water for 2-3 minutes until softened. Remove with a slotted spoon and set aside to cool. Repeat until you have about 12 leaves.

    Make the Filling: In a large bowl, combine the ground beef, cooked rice, chopped onion, minced garlic, crushed tomatoes, mozzarella, Parmesan, egg, oregano, basil, salt, pepper, and red pepper flakes. Mix well until all ingredients are thoroughly combined.

      Assemble the Rolls: Preheat your oven to 350°F (175°C). Take a blanched cabbage leaf and place about 2-3 tablespoons of the filling mixture at the base of the leaf. Fold in the sides and roll tightly to encase the filling. Repeat until all filling is used.

        Prepare the Baking Dish: Spread a thin layer of tomato sauce on the bottom of a 9x13 baking dish. Arrange the cabbage rolls seam-side down in a single layer on top of the sauce. Pour the remaining tomato sauce over the rolls.

          Bake: Cover the dish with aluminum foil and bake for 40 minutes. Remove the foil and bake for an additional 10-15 minutes until the rolls are hot and bubbly.
