½ teaspoon salt

2 large eggs

1 cup unsweetened applesauce

½ cup vegetable oil

1 teaspoon vanilla extract

1 ½ cups diced apples (about 2 medium apples, peeled and cored)

½ cup chopped walnuts or pecans (optional)

Extra cinnamon sugar (for sprinkling)

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

      Mix Wet Ingredients: In a separate bowl, beat the eggs, then add the applesauce, vegetable oil, and vanilla extract. Stir until smooth.
