Honey Lime Chicken & Avocado Rice Stack

Ingredients
  

2 large chicken breasts

1/4 cup honey

1/4 cup fresh lime juice

2 garlic cloves, minced

1 teaspoon chili powder

Salt and pepper to taste

1 cup jasmine rice

1 3/4 cups water or chicken broth

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

1 small red onion, diced

1/2 cup cherry tomatoes, halved

Lime wedges and lime zest for garnish

Instructions
 

Marinate the Chicken: In a small bowl, whisk together honey, lime juice, minced garlic, chili powder, salt, and pepper. Place the chicken breasts in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Rice: Rinse jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water or chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid has been absorbed. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.

      Prepare the Avocado Mixture: In a mixing bowl, combine the diced avocado, chopped cilantro, diced red onion, and cherry tomatoes. Season with salt and a squeeze of lime juice. Gently toss to combine, being careful not to mash the avocado.

        Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-8 minutes on each side until fully cooked (internal temperature should reach 165°F/75°C).
