Ingredients

1 lb chicken thighs (boneless, skinless)

1/2 cup all-purpose flour

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

2 eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup unsalted butter

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Begin by patting the chicken thighs dry with paper towels. Season both sides with salt and pepper.

Dredging Stations: In one bowl, mix the flour, paprika, garlic powder, onion powder, salt, and pepper. In another bowl, place the beaten eggs. In a third bowl, add the breadcrumbs.

Coat the Chicken: Dip each chicken thigh first into the seasoned flour, shaking off excess, then into the beaten eggs, and finally coat with breadcrumbs until fully covered.

Fry the Chicken: In a large skillet, heat about 2 tablespoons of butter over medium heat. Add the chicken thighs in batches (to avoid crowding) and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Make the Honey Butter Sauce: In the same skillet, reduce the heat to low. Add the remaining butter, honey, soy sauce, and Dijon mustard. Stir continuously until everything is melted and combined into a smooth sauce.

Glaze the Chicken: Return the cooked chicken to the skillet, tossing gently in the honey butter sauce until well coated. Let it cook for an additional 2-3 minutes so that the chicken absorbs the flavors.

Serve: Plate the honey butter chicken and drizzle any remaining sauce over the top. Garnish with freshly chopped parsley for a pop of color.
