Homemade Apple Cinnamon Swirl Loaf

For the loaf:

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream

1 1/2 cups peeled and diced apples (about 2 medium apples)

For the cinnamon swirl:

1/2 cup brown sugar

1 tablespoon ground cinnamon

1 tablespoon unsalted butter, melted

For the glaze (optional):

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.

    In a medium bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.

      In a large bowl, using an electric mixer, cream the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).

        Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until combined.

          Mix in the sour cream until smooth. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

            Gently fold in the diced apples using a spatula, ensuring even distribution.

              In a small bowl, mix together the brown sugar, ground cinnamon, and melted butter to create the cinnamon swirl mixture.

                Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon swirl mixture evenly over the batter. Add the remaining batter on top and finish with the rest of the cinnamon swirl mixture, gently swirling it into the top layer with a knife or toothpick to create a marbled effect.

                  Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Check for doneness around the 50-minute mark to prevent overbaking.

                    Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

                      If you’re making the glaze, whisk the powdered sugar, milk, and vanilla extract together until smooth. Drizzle over the cooled loaf.
