2 medium sweet potatoes

1 lb ground turkey

1 cup black beans (canned, rinsed and drained)

1 cup corn (fresh, canned, or frozen)

1 small onion (diced)

2 cloves garlic (minced)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup shredded cheese (cheddar or Mexican blend)

2 tablespoons olive oil

Fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and prick them several times with a fork. Rub them with a little olive oil, then place them on a baking sheet and bake for 45 minutes or until fork-tender.

      Cook the Turkey Filling: While the sweet potatoes are baking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

        Add Garlic and Turkey: Stir in the minced garlic and cook for an additional 30 seconds. Add the ground turkey to the skillet, breaking it up with a spatula. Cook until the turkey is no longer pink, about 5-7 minutes.

          Season and Mix: Once the turkey is cooked, mix in the black beans, corn, chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until everything is heated through and well combined.

            Prepare to Stuff: When the sweet potatoes are done baking, remove them from the oven and let them cool slightly. Slice them in half lengthwise and gently scoop out a little of the flesh to create a bowl (be sure to leave enough flesh to keep the potato sturdy).
