Healthy Homemade Granola

Ingredients
  

2 cups old-fashioned rolled oats

1/2 cup raw almonds, roughly chopped

1/2 cup raw walnuts, roughly chopped

1/4 cup pumpkin seeds

1/4 cup sunflower seeds

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

1/2 cup dried fruit (such as cranberries or raisins, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    In a large mixing bowl, combine the rolled oats, chopped almonds, walnuts, pumpkin seeds, and sunflower seeds.

      In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, vanilla extract, cinnamon, and sea salt until well combined.

        Pour the wet mixture over the oat mixture and stir until everything is evenly coated.

          Spread the granola mixture onto the prepared baking sheet in an even layer.

            Bake for 25-30 minutes, stirring halfway through to ensure even baking, until the granola is golden brown and fragrant.

              Remove it from the oven and let it cool completely on the baking sheet. It will become crunchier as it cools.

                Once cooled, if desired, stir in the dried fruit.

                  Store the granola in an airtight container at room temperature for up to 2 weeks.
