2 lbs chicken thighs, bone-in and skin-on

1 cup soy sauce (shoyu)

1/2 cup brown sugar

1/2 cup water

1/4 cup apple cider vinegar

4 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon sesame oil

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Pineapple chunks (fresh or canned, optional, for serving)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together soy sauce, brown sugar, water, apple cider vinegar, minced garlic, grated ginger, and sesame oil. Add the chicken thighs, ensuring they are well coated in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Bake the Chicken: Arrange marinated chicken thighs in a single layer on a baking sheet lined with parchment paper or in a large baking dish. Reserve the leftover marinade for later use. Bake chicken in the preheated oven for 30 minutes.

        Baste the Chicken: After the initial 30 minutes, carefully remove the chicken, and brush it generously with the reserved marinade. Return to the oven and bake for an additional 20-25 minutes, or until the chicken is cooked through and golden brown.
