1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

1 cup spinach, chopped

Fresh cilantro or parsley for garnish (optional)

Avocado slices for serving (optional)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and sauté for about 10-12 minutes or until they start to become tender, stirring occasionally.

    Add Aromatics: Once the sweet potatoes are partially cooked, push them to one side of the skillet and add the remaining olive oil. Add the chopped onion and garlic to the cleared space. Sauté for 2-3 minutes until the onion becomes translucent.

      Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until the turkey is browned. Season with smoked paprika, cumin, chili powder, salt, and pepper.

        Mix & Cook: Stir the turkey mixture together with the sweet potatoes and onions, ensuring everything is well combined. Add the diced bell pepper and cook for another 3-4 minutes until the pepper is tender.

          Add the Greens: Stir in the chopped spinach and cook for an additional 2-3 minutes until the spinach is wilted. Taste and adjust seasoning if necessary.

            Serve: Spoon the skillet mixture onto plates and garnish with fresh cilantro or parsley. Serve with avocado slices if desired.
