Ground Turkey Sweet Potato Casserole

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup chopped onion

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

1 tablespoon olive oil

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, add the olive oil. Once hot, sauté the chopped onion and garlic until fragrant and the onion is translucent, about 3-5 minutes.

      Add the ground turkey to the skillet and cook until browned, breaking it apart as it cooks, approximately 5-7 minutes. Season with chili powder, cumin, smoked paprika, salt, and pepper.

        Stir in the diced sweet potatoes, bell pepper, black beans, and corn. Cook for an additional 5-10 minutes until the sweet potatoes begin to soften.

          If using cheese, stir half into the mixture and reserve the other half for topping later.

            Transfer the turkey and vegetable mixture to a large casserole dish, spreading it evenly.

              Sprinkle the reserved cheese on top of the casserole.

                Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.

                  Once out of the oven, let it sit for about 5 minutes before serving. Garnish with fresh cilantro or green onions if desired.
