1 lb ground turkey

2 medium bell peppers (any color), diced

1 onion, finely chopped

2 cloves garlic, minced

1 cup corn kernels (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 lime, juiced

Fresh cilantro for garnish

Avocado slices (optional)

Shredded cheese (optional)

Prepare the Ingredients: Begin by chopping the bell peppers and onion, and mincing the garlic. Rinse and drain the black beans if using canned. If using fresh corn, cut the kernels off the cob.

    Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once heated, toss in the chopped onion and garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

      Cook the Turkey: Add the ground turkey to the skillet. Cook for 6-8 minutes, breaking it apart with a spatula until it's browned and fully cooked through.

        Add the Vegetables: Stir in the diced bell peppers, corn, and black beans. Mix well to combine.
