1 lb ground beef

4 medium-sized potatoes, diced

1 medium onion, diced

2 cloves garlic, minced

1 cup beef broth

1 cup frozen peas and carrots mix

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the olive oil in a large skillet over medium heat. Add the diced onions and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, approximately 5-7 minutes. Drain excess fat if necessary.

        Sprinkle in the paprika, dried thyme, salt, and pepper, stirring well to coat the beef evenly with the spices.

          Add the diced potatoes to the skillet, mixing them with the beef. Pour in the beef broth, cover the skillet, and bring to a simmer.

            Cook for about 15-20 minutes, or until the potatoes are tender, stirring occasionally to prevent sticking. If the mixture seems too dry, add more broth as needed.

              Once the potatoes are cooked through, stir in the frozen peas and carrots, and allow them to heat through for about 5 minutes.

                Taste and adjust the seasoning if necessary. Garnish with chopped fresh parsley before serving.
