Ingredients

4 ripe but firm peaches, halved and pitted

2 tablespoons of olive oil

2 tablespoons of brown sugar

1 teaspoon of cinnamon

½ teaspoon of sea salt

1 pint of high-quality vanilla ice cream

Fresh mint leaves for garnish (optional)

Balsamic glaze for drizzling (optional)

Instructions

Preheat your grill to medium heat (about 350°F).

In a small bowl, mix the olive oil, brown sugar, cinnamon, and sea salt until well combined.

Brush the cut sides of the peach halves with the olive oil mixture, ensuring they are generously coated.

Place the peaches on the grill, cut side down, and grill for about 4-5 minutes or until they have nice grill marks and start to soften slightly.

Carefully flip the peaches over and grill for an additional 2-3 minutes, or until they are tender.

Remove the peaches from the grill and let them cool slightly.

Serve the grilled peaches warm, topped with a generous scoop of vanilla ice cream.

Drizzle with balsamic glaze and garnish with fresh mint leaves if desired.
