2 boneless, skinless chicken breasts

2 cups cooked jasmine rice

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 avocado, sliced

1/4 cup green onions, chopped

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

Sesame seeds (for garnish)

Marinate the Chicken: In a bowl, whisk together olive oil, soy sauce, honey, rice vinegar, garlic powder, ginger powder, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).
