200g shrimp, peeled and deveined

200g scallops, cleaned

200g mussels, cleaned and debearded

150g fish fillets (cod or halibut), cut into bite-sized pieces

100ml white wine

200ml heavy cream

100g grated Gruyère cheese

50g butter

2 cloves garlic, minced

1 shallot, finely chopped

2 tablespoons fresh parsley, chopped

1 tablespoon fresh tarragon, chopped

Salt and pepper to taste

1 teaspoon lemon zest

1 tablespoon olive oil

2 tablespoons breadcrumbs (optional for topping)

Instructions
 

Preheat your oven: Preheat the oven to 200°C (400°F).

    Sauté Aromatics: In a large skillet, heat the olive oil and 25g of butter over medium heat. Add the minced garlic and chopped shallot and sauté until fragrant, about 2 minutes.

      Cook Seafood: Add the shrimp, scallops, and mussels to the skillet. Cook for about 3-4 minutes until the shrimp turn pink and the mussels start to open. Remove the seafood from the skillet and set aside.

        Make the Sauce: In the same skillet, pour in the white wine and simmer for 2-3 minutes to reduce it slightly. Add the heavy cream, stirring to combine, and let it simmer for another 2-3 minutes until slightly thickened. Season with salt, pepper, and lemon zest.

          Combine Ingredients: Return the seafood to the skillet, along with the fish pieces, fresh parsley, and tarragon. Gently mix everything together to coat the seafood in the creamy sauce.

            Prepare for Baking: Transfer the seafood mixture into individual cassolette dishes (or one large baking dish). Sprinkle Gruyère cheese generously over the top. If using, mix the breadcrumbs with the remaining melted butter and sprinkle them over the cheese for a crunchy topping.

              Bake: Place the cassolette dishes in the preheated oven and bake for 15-20 minutes or until the cheese is golden and bubbling.

                Serve: Remove from the oven and let cool for a few minutes before serving. Garnish with additional fresh herbs if desired.
