2 ripe avocados

4 slices of whole grain bread

4 large eggs

1 cup cherry tomatoes, halved

1 tablespoon olive oil

Juice of 1 lemon

Salt and pepper to taste

Fresh herbs (basil or cilantro) for garnish

Chili flakes (optional)

Start by toasting the whole grain bread slices to your desired crispness.

    While the bread is toasting, prepare the avocado spread. In a bowl, scoop out the flesh of the avocados and mash with a fork. Add lemon juice, salt, and pepper to taste. Mix until smooth and creamy.
