2 ripe avocados

1 tablespoon lime juice

Salt and pepper to taste

4 slices whole-grain bread

1/2 teaspoon red pepper flakes

2 eggs

Fresh cilantro leaves (for garnish)

Optional toppings: sliced radishes, cherry tomatoes, feta cheese

Instructions
 

Start by toasting the whole-grain bread slices until golden brown and crispy.

    While the bread is toasting, cut the avocados in half, remove the pits, and scoop the flesh into a bowl.

      Mash the avocados with a fork, then add lime juice, salt, and pepper. Mix well to combine.

        In a small pan, boil water and poach the eggs for about 3-4 minutes, or until the whites are firm, and the yolks remain runny. Alternatively, fry the eggs sunny-side up if you prefer.

          Once the bread is toasted, spread a generous amount of the mashed avocado over each slice.

            Place a poached or fried egg on top of each avocado toast.

              Sprinkle red pepper flakes over the eggs and add any optional toppings such as radish slices, cherry tomatoes, or feta cheese.

                Garnish with fresh cilantro leaves and serve immediately!
