1 lb beef sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

1/4 cup unsalted butter

4 cloves garlic, minced

1 tsp fresh rosemary, chopped (or 1/2 tsp dried)

1 tsp fresh thyme, chopped (or 1/2 tsp dried)

1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a bowl, toss the halved baby potatoes with olive oil, salt, and black pepper.

        - Spread them on a baking sheet in a single layer.

          - Bake for 25-30 minutes, or until crispy and golden brown, flipping halfway through.

            Cook the Steak Bites:

              - While the potatoes are baking, season the steak cubes with salt and black pepper.

                - In a large skillet, heat 2 tablespoons of butter over medium-high heat.

                  - Once melted and sizzling, add the steak bites in a single layer. Avoid overcrowding (you may need to do this in batches).

                    - Sear for about 2-3 minutes on each side or until browned and cooked to your desired doneness. Remove the steak bites from the skillet and set aside.

                      Make the Garlic Butter Sauce:

                        - In the same skillet, lower the heat to medium and add the remaining butter.

                              Combine:
