Ingredients
  

1 cup water

1/2 cup unsalted butter, cut into pieces

1/4 teaspoon salt

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

Oil for frying (vegetable or canola oil)

For Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions
 

Prepare the Dough: In a medium saucepan, combine water, butter, and salt. Heat over medium-high until the butter has melted and the mixture comes to a boil.

    Add Flour: Remove from heat and quickly stir in all of the flour until completely combined. The dough will be thick and pull away from the sides of the saucepan.

      Incorporate Eggs: Allow the mixture to cool for a few minutes, then add the eggs one at a time, stirring vigorously after each addition until fully incorporated. The dough should be smooth and glossy. Stir in vanilla extract and cinnamon if using.

        Pipe the Crullers: Transfer the dough to a piping bag fitted with a large star tip. On a parchment-lined baking sheet, pipe rings about 2 inches in diameter, making sure to leave enough space between them.

          Heat Oil: In a deep pot, heat about 2-3 inches of oil over medium heat until it reaches 350°F (175°C).
