2 boneless, skinless chicken thighs

4 cups chicken broth

2 packs of ramen noodles (discard the seasoning packets)

1 tablespoon olive oil

1 tablespoon sesame oil

4 cloves garlic, minced

1 tablespoon grated fresh ginger

2 tablespoons soy sauce

1 tablespoon Sriracha (adjust for spice preference)

1 tablespoon gochujang (Korean chili paste)

1 cup baby spinach

1 cup sliced mushrooms (shiitake or button)

2 green onions, chopped

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

1 cup heavy cream

2 teaspoons rice vinegar

1 tablespoon fresh lime juice

Prepare the Chicken: Season the chicken thighs with salt and pepper. In a large skillet, heat the olive oil and sesame oil over medium-high heat. Add the chicken thighs and cook until golden brown and fully cooked, about 6-7 minutes per side. Remove from the skillet and let rest before slicing into strips.

    Create the Broth: In the same skillet, add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant. Pour in the chicken broth, soy sauce, Sriracha, and gochujang. Bring the mixture to a simmer.

      Cook the Vegetables: Add the sliced mushrooms and baby spinach to the broth. Allow them to cook for about 3-4 minutes until the mushrooms are tender and the spinach is wilted.

        Prepare Ramen Noodles: In a separate pot, cook the ramen noodles according to the package instructions. Drain and set aside.

          Make the Creamy Garlic Sauce: In a small saucepan over medium heat, combine the heavy cream, rice vinegar, and lime juice. Stir continuously until the cream thickens slightly, about 5 minutes. Season with salt and pepper to taste.
