2 boneless, skinless chicken breasts (sliced into strips)

3 cups fusilli or penne pasta

1 cup cherry tomatoes (halved)

1 cup fresh spinach (washed and roughly chopped)

4 cloves garlic (minced)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)

2 tablespoons olive oil

Salt and pepper (to taste)

Fresh basil leaves (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Season the chicken strips with salt, pepper, and dried Italian herbs. Cook the chicken in the skillet for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set it aside.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Add the cherry tomatoes and stir. Cook for an additional 2-3 minutes, until the tomatoes start to burst and release their juices.

        Make the Sauce: Lower the heat and pour in the heavy cream, stirring continuously. Add the grated Parmesan cheese and continue stirring until the cheese is melted and the sauce is creamy. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
