12 large pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pasta Shells: Cook the pasta shells according to the package instructions until al dente. Drain and set aside to cool slightly.

      Make the Filling: In a large mixing bowl, combine the ricotta cheese, chopped spinach, half of the mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until fully combined.

        Stuff the Shells: Carefully fill each pasta shell with the ricotta and spinach mixture using a spoon or a piping bag.

          Assemble the Dish: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Place the stuffed shells in the dish seam-side up. Pour the remaining marinara sauce over the shells, making sure they are generously coated.

            Add Toppings: Sprinkle the remaining mozzarella cheese on top of the sauce.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your healthy veggie dinner!
