Easy Italian Chicken and Potatoes

This dish features juicy chicken thighs marinated in a zesty blend of olive oil, lemon, garlic, and herbs, paired with tender baby potatoes and sweet cherry tomatoes. Ingredients
  

4 bone-in, skin-on chicken thighs

1 pound baby potatoes, halved

1 medium onion, sliced

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1/4 cup fresh basil, chopped (or 1 tablespoon dried basil)

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

3 tablespoons olive oil

Juice of 1 lemon

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a large bowl, combine the olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper. Mix well.

      Marinate the Chicken: Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 15 minutes (or up to overnight in the fridge).

        Prep the Veggies: In a separate bowl, toss the halved baby potatoes and sliced onions with a drizzle of olive oil, salt, and pepper until evenly coated.

          Combine Ingredients: In a large baking dish, arrange the marinated chicken thighs in the center. Surround them with the seasoned potatoes, and sprinkle the cherry tomatoes on top.

            Bake: Place the baking dish in the preheated oven and bake for about 40-45 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the potatoes are tender and golden.

              Add Fresh Herbs: Once done, remove the baking dish from the oven and sprinkle the fresh basil over the top before serving.

                Serve: Plate the chicken and potatoes, drizzling any remaining juices from the dish over the top for extra flavor. Enjoy!
