Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

2 tablespoons soy sauce

1 tablespoon fish sauce

2 tablespoons lime juice (freshly squeezed)

2 tablespoons brown sugar

1 tablespoon minced garlic

1 tablespoon minced ginger

1 teaspoon ground coriander

1 tablespoon vegetable oil (for grilling)

Wooden skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

2 tablespoons lime juice (freshly squeezed)

1 tablespoon brown sugar

1 teaspoon red curry paste (adjust to taste)

Chopped peanuts and cilantro for garnish (optional)

Instructions
 

Marinate the Chicken:

    In a mixing bowl, combine the soy sauce, fish sauce, lime juice, brown sugar, minced garlic, minced ginger, and ground coriander. Whisk well to combine. Add the chicken cubes to the marinade, toss to coat evenly, and let them marinate in the refrigerator for at least 30 minutes (or up to 2 hours for extra flavor).

      Prepare the Peanut Sauce:

        In a medium saucepan over low heat, combine the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and red curry paste. Stir until smooth and heated through. If the sauce is too thick, you can add a little water to reach your desired consistency. Remove from heat and set aside.

          Assemble the Skewers:
