Easy Cowboy Butter Chicken

4 boneless, skinless chicken thighs

1 cup unsalted butter, softened

6 cloves of garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh lemon juice

1/4 cup fresh parsley, chopped (for garnish)

Optional: 1 teaspoon red pepper flakes (for a spicy kick)

Instructions
 

In a medium mixing bowl, combine the softened butter, minced garlic, smoked paprika, chili powder, oregano, salt, black pepper, and lemon juice. Mix well until all ingredients are incorporated.

    Preheat your grill or skillet over medium heat.

      Take the chicken thighs and generously rub them with about half of the cowboy butter mixture, ensuring they are well-coated. Set aside the remaining butter for later use.

        Place the chicken thighs on the grill or in the skillet. Cook for about 6-7 minutes on each side, or until the chicken is cooked through (internal temperature should reach 165°F).

          During the last few minutes of cooking, spoon the remaining cowboy butter mixture over the chicken, allowing it to melt and soak into the meat.

            Once cooked, remove the chicken from the grill or skillet and let it rest for 5 minutes.

              Slice the chicken and serve topped with a sprinkle of fresh chopped parsley and additional melted butter sauce if desired.
