Ingredients

2 cups cooked chicken breast, shredded

1/2 cup chipotle ranch dressing

1 cup cooked white rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (frozen or canned)

1 cup shredded cheddar cheese

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro

4 large flour tortillas

Salt and pepper to taste

Optional: Sliced jalapeños for extra heat

Instructions

Marinate the Chicken: In a large bowl, mix the shredded chicken with the chipotle ranch dressing. Let it marinate for at least 15 minutes to soak in the flavors.

Prepare the Filling: In a separate bowl, combine the cooked rice, black beans, corn, diced tomatoes, and chopped cilantro. Season with salt and pepper to taste. Mix well.

Grill the Chicken: Preheat your grill or skillet over medium heat. Grill the marinated chicken for about 5-7 minutes per side, or until heated through and slightly charred. Remove from heat and let it rest for a few minutes before slicing or shredding.

Assemble the Burrito: Lay out a flour tortilla and place a generous portion of the rice and bean mixture in the center. Add a portion of the grilled chicken on top, then sprinkle with cheddar cheese. Add sliced jalapeños if desired.

Wrap It Up: Fold the sides of the tortilla inward, then roll from the bottom up to create a burrito shape. Repeat with the remaining tortillas and filling.

Toast the Burritos (optional): Heat a skillet over medium heat and place each burrito seam-side down. Cook for about 2-3 minutes per side until golden brown and crispy.

Serve: Slice the burritos in half and serve with extra chipotle ranch dressing, salsa, or guacamole on the side.
