2 large cucumbers, thinly sliced

1 teaspoon salt

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar

1 garlic clove, minced

1 teaspoon grated fresh ginger

1 tablespoon sesame seeds, toasted

2 green onions, thinly sliced

Fresh cilantro leaves for garnish (optional)

Instructions
 

Prepare the Cucumbers: In a large bowl, sprinkle the thinly sliced cucumbers with salt. Let them sit for about 10-15 minutes to draw out excess moisture. Afterward, gently squeeze the cucumbers to remove any additional liquid and pat dry with paper towels.

    Make the Dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and grated ginger until the sugar is dissolved.

      Combine: Add the drained cucumbers to a large mixing bowl. Pour the dressing over the cucumbers and toss gently to coat all the slices evenly.
