2 cups old-fashioned oats

1 cup peanut butter (smooth or crunchy)

1/2 cup honey or maple syrup

1/2 cup brown sugar (packed)

1/2 cup mini chocolate chips (optional)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

Instructions
 

In a microwave-safe bowl, combine the peanut butter, honey (or maple syrup), brown sugar, vanilla extract, and salt.

    Microwave the mixture on high for about 30 seconds, then stir well to combine until smooth.

      Add the old-fashioned oats to the mixture and stir until fully coated. If you're using chocolate chips, fold them in at this stage.

        Line an 8x8 inch (or 9x9 inch) square baking dish with parchment paper, leaving some overhang for easy removal.

          Spread the granola mixture evenly into the prepared dish, pressing it down firmly so it holds together.

            Refrigerate the mixture for at least 30 minutes to set.

              Once set, remove from the dish using the parchment overhang and cut into bars.

                Store the granola bars in an airtight container at room temperature or in the refrigerator for optimal freshness.
