Dump-and-Bake Chicken Tzatziki with Rice

1 lb (450g) boneless, skinless chicken breasts or thighs

1 cup uncooked basmati rice

2 cups chicken broth

1 cucumber, shredded

1 cup Greek yogurt

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon minced garlic

1 tablespoon fresh dill, chopped (or 1 teaspoon dried)

1 teaspoon dried oregano

Salt and pepper to taste

1 cup cherry tomatoes, halved (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil.

    Prepare the Chicken: Place the chicken breasts in the baking dish. Season with salt, pepper, and dried oregano.

      Add Rice & Broth: Pour the uncooked basmati rice over the chicken in an even layer. Carefully pour the chicken broth over the rice and chicken, ensuring the rice is fully submerged.

        Mix Tzatziki Sauce: In a mixing bowl, combine the Greek yogurt, shredded cucumber, olive oil, lemon juice, minced garlic, dill, salt, and pepper. Mix well until smooth.

          Combine Everything: Spoon half of the tzatziki sauce over the chicken and rice, spreading it out evenly. Reserve the other half for serving.

            Bake the Dish: Cover the baking dish tightly with aluminum foil, then place it in the preheated oven. Bake for 30-35 minutes, or until the chicken is cooked through and the rice is tender.

              Finish Cooking: Remove the foil and continue baking for an additional 5-10 minutes to slightly brown the top.

                Garnish and Serve: Once done, let it rest for a few minutes. Then, sprinkle the dish with cherry tomatoes and fresh parsley. Serve the remaining tzatziki sauce on the side for drizzling.
