1 large apple (preferably a tart variety like Granny Smith), diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup walnuts, roughly chopped

1/4 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey (or maple syrup for a vegan option)

Salt and pepper to taste

Lemon juice (from 1/2 lemon, optional)
