Crispy Cheesy Chicken Quesadilla

Ingredients
  

2 cups cooked chicken, shredded (grilled or rotisserie chicken works well)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/2 cup diced onions

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

4 large tortillas (flour or corn)

Salsa for serving

Sour cream for serving

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Filling: In a large bowl, combine the shredded chicken, mozzarella cheese, cheddar cheese, diced bell peppers, and onions. Add garlic powder, chili powder, cumin, salt, and pepper to taste. Mix well to combine all ingredients.

    Heat the Skillet: In a large skillet, heat the olive oil over medium heat.

      Assemble the Quesadilla: Place one tortilla flat in the skillet. Evenly spread about 1/4 of the chicken and cheese mixture over one half of the tortilla. Fold the other half over to create a half-moon shape.

        Cook the Quesadilla: Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted. Repeat the process with the remaining tortillas and filling.

          Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges. Serve with salsa, sour cream, and fresh cilantro for garnish.
