Ingredients

1 lb salmon fillet, skin removed and cut into bite-sized pieces

1 cup panko bread crumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

Oil for frying (vegetable or canola oil recommended)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon lime juice

1 teaspoon honey (optional for extra sweetness)

Instructions

Prepare the Bang Bang Sauce: In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, and honey (if using). Whisk until smooth and creamy. Adjust the sriracha level to increase or decrease the spiciness. Set aside.

Prep the Salmon Bites: Season the salmon pieces with garlic powder, onion powder, paprika, salt, and pepper. Make sure the bites are evenly coated in seasoning to infuse flavor.

Breading Station: Set up a breading station with three separate bowls: one with the flour, one with the beaten eggs, and one with panko bread crumbs.

Bread the Salmon: Dredge each salmon piece in the flour, shaking off excess. Dip it into the beaten eggs, ensuring it’s fully coated, and finally roll it in the panko bread crumbs, pressing slightly to adhere.

Heat the Oil: In a large skillet, heat about 1/2 inch of oil over medium-high heat until it reaches around 350°F (175°C).

Fry the Salmon Bites: Carefully add the breaded salmon bites in batches, making sure they are not overcrowded in the pan. Fry for about 2-3 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

Serve: Serve the crispy salmon bites warm with the Bang Bang sauce for dipping. Garnish with sliced green onions or sesame seeds if desired.
