Crispy Bang Bang Salmon Bites

Ingredients
  

1 lb fresh salmon fillet, skinless

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp paprika

Salt and pepper, to taste

Oil for frying (vegetable or canola)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp Sriracha (adjust for spice preference)

1 tsp lime juice

1 tsp honey (optional)

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes, about 1-2 inches each. Season with salt, pepper, garlic powder, and paprika.

    Set Up Breading Station: In a shallow bowl, place the flour. In another bowl, beat the eggs. In a third bowl, add the panko breadcrumbs.

      Bread the Salmon: Dip each salmon cube first in the flour, shaking off excess, then in the beaten eggs, and finally in the panko breadcrumbs until well coated.

        Fry the Salmon Bites: In a large skillet, heat oil over medium-high heat. When the oil is hot, carefully add the breaded salmon bites in batches. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Use tongs to turn them for even cooking. Remove and drain on a paper towel-lined plate.

          Prepare the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, lime juice, and honey until smooth. Adjust the spice by adding more Sriracha, if desired.

            Serve: Arrange the crispy salmon bites on a serving platter and drizzle or serve with the Bang Bang sauce on the side for dipping.
