Ingredients

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

Salt and black pepper, to taste

1 cup Panko breadcrumbs

Vegetable oil, for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 teaspoon sriracha (or to taste)

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate the Chicken: In a large bowl, combine the buttermilk with a pinch of salt and pepper. Add the chicken pieces, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Prepare the Breading Station: In a shallow dish, combine the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper. In another shallow dish, place the Panko breadcrumbs.

Coat the Chicken: Remove the marinated chicken from the fridge. Dredge each piece first in the seasoned flour, shaking off the excess, then dip into the remaining buttermilk, and finally coat with Panko breadcrumbs, pressing gently to adhere.

Fry the Chicken: In a large skillet or deep frying pan, heat about 1/2 inch of vegetable oil over medium-high heat until hot (around 350°F or 175°C). Fry the breaded chicken in batches, being careful not to overcrowd the pan, until golden brown and crispy, about 5-7 minutes per side. Use a slotted spoon to transfer the cooked chicken to a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust the spiciness by adding more sriracha if desired.

Serve: Arrange the crispy Bang Bang chicken on a serving platter. Drizzle with the Bang Bang sauce or serve it on the side for dipping. Garnish with chopped fresh cilantro and lime wedges.

Enjoy this crispy, spicy, and tangy delight that's perfect for any occasion!
