Ingredients
  

1 lb flank steak

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon soy sauce

1 teaspoon Worcestershire sauce

1 teaspoon chili powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup quinoa (or rice of choice)

2 cups vegetable broth (or water)

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1/2 cup black beans, rinsed and drained

1/2 cup shredded cheese (cheddar or queso fresco)

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Instructions
 

Marinate the Steak:

    - In a small bowl, whisk together olive oil, minced garlic, soy sauce, Worcestershire sauce, chili powder, smoked paprika, salt, and pepper.

      - Place the flank steak in a resealable plastic bag or a shallow dish, pour the marinade over it, seal or cover, and let it marinate for at least 30 minutes (up to 4 hours for more flavor) in the refrigerator.

        Cook the Quinoa:

          - Rinse quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth (or water).

            - Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

              Cook the Steak:

                - Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade, letting any excess drip off.
