Creamy Chicken Lasagna with White Sauce

Ingredients
  

9 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups spinach, fresh or frozen

3 cups white sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Noodles: Boil the lasagna noodles according to package instructions. Drain and set aside.

      Sauté Spinach: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add spinach and cook until wilted (if using fresh) or warmed through (if using frozen). Season with salt and pepper. Remove from heat.

        Prepare Chicken Mixture: In a large bowl, combine shredded chicken, ricotta cheese, and half of the mozzarella cheese. Stir in sautéed spinach and Italian seasoning. Mix well and set aside.

          Assemble Lasagna: Spread a thin layer of white sauce on the bottom of a 9x13 inch baking dish. Place 3 lasagna noodles over the sauce. Layer half of the chicken mixture, followed by another layer of white sauce. Repeat the layers, ending with noodles on top.

            Top with Sauce and Cheese: Spread the remaining white sauce over the final layer of noodles. Sprinkle the remaining mozzarella and all of the Parmesan cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                Cool and Serve: Allow the lasagna to cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired. Serve warm.
